I been making org corn tortillas at home for a year or 2 now, (ie a newby), but wish we lived closer!! Not that you probably need them, but would be nice to taste the salsa, I need to make a batch but have to buy my tomatoes. My dad would grow yellow tomatoes low acid for my grandma, which was nice eh? Have to remember some sour creme or at least cultured yogurt for the full experience. Chives grow around here wild in lawns :]

The original, and much more nutritious, way to make (the masa for) tortillas was to soak and boil the corn with hardwood ash instead of lime. This way you also get the full range of essential minerals— the magnesium, potassium, zinc, etc. THAT'S why corn actually worked as an important dietary component for the indigenous people who domesticated it (in Mexico). And, of course, processing with alkali makes the essential B vitamin niacin available, preventing Pellegra, something that poor people in the U.S. South didn't know about, which resulted in many thousands of deaths from that deficiency disease in the early 20th century. Strange, isn't it, that the native Mexicans knew how to properly process corn, but the people without that ancient knowledge adopted the use of corn and died from it!

The corn I got was organic and nixtamal, wouldn't have it any other way! Yay! The smallest bag was 50 pounds, so I have had to share it which has been nice to be able to do as well... its such a beautiful product...from my local coop but it was this kind. Re the pellegra, so sad, but not suprising to me as the conquerers misconstrued so many things, thinking they were dealing with 'savages'; (who's the savage? right?) As a pagan I deal with many Christians here on Substack who seem to think I am needing of some improvement because I do not believe as they do. They suggest I read the rosary, or that I will have 'hell to pay' when I die. I have, of late, taken the time to point out to them they are quite mistaken and am truly uninterested in being converted, which they usually deny they are trying to do. It would be funny if....it were. Thanks John
